Over 400 Christmas Cookie and Delicious Dessert Recipes

Fruit Cake

INGREDIENTS:

  • 1 cup dried apricots
  • 1 cup water
  • 3/4 cup butter
  • 1 cup white sugar
  • 4 Eggs
  • 1 cup golden raisins
  • 1 pound red and green candied cherries
  • 6 candied pineapple slices
  • 1 pound candied mixed fruit
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup apricot nectar
  • 1 cup chopped pecans

DIRECTIONS:

  1. Preheat oven to 275 degrees F (135 degrees C). Grease two 9 inch tube pans.
  2. In a saucepan over medium heat cook apricots in the water until they are mushy. Press them through a sieve and let them cool.
  3. Separate the eggs. Beat the egg yolks until lemony colored. Then beat the egg whites until stiff peaks are formed. Set aside.
  4. Cream the butter or margarine and sugar together. Add the beaten egg yolks and the apricots, and mix thoroughly.
  5. Combine the raisins, candied cherries, candied pineapple, and mixed dried fruits in a bowl coated with one cup of the flour.
  6. Combine the flour, baking soda, and salt. Add this flour mixture alternately to the creamed mixture with the apricot juice. Blend this batter into the mixed fruits. Add the chopped pecans or walnuts and fold in the beaten egg whites. Turn the batter into the prepared pans.
  7. Bake at 275 degrees F (135 degrees C) for 2 hours. Garnish cakes with candied pineapples and cherries. Makes about 24 servings.

Christmas Cookies

INGREDIENTS:

  • 4 (1 ounce) squares semi-sweet chocolate
  • 3 tablespoons margarine
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 egg white
  • 1 cup confectioners' sugar
  • 1/2 pound rainbow colored miniature marshmallows
  • 1 cup chopped walnuts
  • 3/4 cup graham cracker crumbs

DIRECTIONS:

  1. Melt the chocolate squares and margarine together. Stir in the vanilla and the pinch salt.
  2. Beat the egg white and slowly add the confectioners' sugar. Blend well. Stir in the chocolate mixture, the marshmallows and the chopped nuts. Blend well. Shape mixture into a log shape and roll firmly in the graham cracker crumbs. Refrigerate. Slice log when ready to serve.

Chirstmas Turkey

INGREDIENTS:

  • 12 pounds whole turkey
  • 1 (6 ounce) package dry bread stuffing mix
  • 1 cup water
  • 1 tablespoon butter
  • 1 cup chopped celery
  • 1/4 cup chopped onion
  • 4 slices toasted white bread, torn into small pieces
  • salt and pepper to taste
  • 2 tablespoons vegetable oil

DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C). Rinse turkey, remove giblets and place in a shallow roasting pan.
  2. Prepare stuffing according to package directions. Mix in water.
  3. Melt butter in a medium saucepan over medium heat, and slowly cook and stir the celery and onion until tender.
  4. Mix celery, onion, and toasted bread pieces into the stuffing, and season with salt and pepper. Loosely scoop stuffing into the turkey body cavity and neck cavity. Rub the exterior of the turkey with vegetable oil.
  5. Loosely cover turkey with aluminum foil, and roast 3 1/2 to 4 hours in the preheated oven, until the thickest part of the thigh reaches 180 degrees F (85 degrees C) and the interior of the stuffing reaches 165 degrees F (70 degrees C). Remove foil during the last half hour of cooking to brown the bird.
